BEHIND THE PRODUCT: Beef pinwheels were popular in the 40s and 50s with butchers in New York City. Often passed over for more distinguished cuts, the Skirt Steak is considered a butcher's cut because of its incredible juiciness and rich flavor.
SERVING SUGGESTIONS: Allow beef to come close to room temperature before preparing. For medium-rare, season with salt and pepper to taste, then pan sear in a cast-iron skillet or grill in high heat until the internal temperature of the beef is 125ºF to 130ºF.
