From the hills of Western Spain, a selection of purebred black Iberian pigs run freely, while grazing on the acorn rich pasturelands. This natural lifestyle allows the pigs to be grown humanely and with zero interference from chemicals or other growth hormones. Once they reach ideal weight, the pigs are cured and aged for over three years in the clear mountain air of La Alberca, Spain, then cured for 70 days. This natural process enhances the flavor of the spanish ham and ensures a tender yet savory blend with every slice.
BEHIND THE PRODUCT: Due to the antioxidants present in the exclusive diet of acorns, the Iberico ham can be cured longer than any other typical ham. As the ham ages through three years of summer through spring, it becomes more and more complex and flavorful. This long process allows the Iberico ham to lose most of its original weight, once at 60%, it is ready to be packaged and served. It is this patience and time that gives the Spanish ham its bold color, intense aroma, and pungency.
SERVING SUGGESTIONS: Ready to eat.
Place the plastic enclosure under hot running water for 6 to 8 seconds, as recommended by Fermin, to separate slices and enhance flavor. Serve either as an appetizer, or a meal for a most impressive presentation. Serve with antipasti a selection of cheeses, and a sliced baguette.
